how many cups does it make?

That will vary depending on your cup size, how many scoops you use, etc. I make myself 12oz mochas pretty much daily with this, as well as one for my wife here and there too. One container will last me around 2 months, so if I had to guess, I would estimate around 70- 12oz cups. It's well worth the cost for the product for me, especially when I factor in how much I'm saving by making mochas at home instead of buying them from a coffee stand.

It’s white chocolate, which is technically not even chocolate.

can you make blended drinks with this without it separating?

I bought this mix to make mochas with, and although it does blend really well when the drink it warm, eventually it does separate. I haven't found it to be too much of a problem, since once it gets too cold that it starts to separate, it's too cold for me to want to drink. With that said, I've purchased this now a few times and I still think it's worth it.
