Will this fit in a backpack water bottle holder?

Yes, it fits in my car cup holder as well.

How tall is the bottle with the spout closed? Also, when the spout is closed, is it protected on all sides from dirt?

The bottle is nine and a quarter inches tall, from the bottom of the bottle to the top of the handle (the highest point on the bottle). When closed, the spout is protected except for a small gap in the front of the spout. I would imagine very little dirt would collect there.

How do you clean the bite valve - is it removable from the straw?

You can pull it off! I personally don’t clean mine separate from the bottle (which is maybe gross, but I do clean the straw and the bottle and I have a small rounded/looped brush that i stick into the bite valve to clean it!) - they do pop off but are difficult to get back on. They also sell replacement ones. Personally I recommend using the brushes more than fully removing the bite valve!
