Bought this to make a Serious Eats Squash and Kale salad that calls specifically for sherry vinegar, and it is absolutely delicious. I took this salad to both Thanksgiving and Christmas, and it was my most requested recipe in years. I completely attribute that to this vinegar.It is smooth and tangy without being too sharp. The fragrance is pleasant and enticing. I personally think it is on the mellow side for a vinegar, but delightfully so. It was absolutely perfect for what I needed and worth every cent. I am excited to see what else it transforms from good to wow.

I use this every day for my homemade salad dressing. It is very expensive but delicious!

So much flavor
Wonderful complex deep flavor. Made mayonnaise with with 1 egg + 1 cup canola oil + 1 tbsp of this + a pinch of salt, w/ the seriouseats method. Very very nice with artichoke and brussels sprouts and probably everything else.Important note it's very strong and acidic compared to even other sherry vinegars, so start with half of what you think you need (or your recipe thinks you need) and go from there, imo
