For the version with 9 modes (P0 - P8) as of Nov14, 2022 P0 thru P5 are as listed. P6 Buzzer switch (this function is invalid) P7 Temperature alarm function: Long press key until "P0" is shown, Short press key until "P7" is shown. Short press key to see setting (default is 50). Short Press to set. Or to disable, Long press until 0 then Short press again for OFF. P8 Restore defaults: I think you can set the H/C default mode here, but the instructions I found are gibberish.

I’m trying to build a bee hive heater for keeping bees alive in Wisconsin winters. Heaters, batteries,thermostat,solar panel. Help?

I hope you're not trying to heat from a battery and solar panel. You'd get several x more heat with a direct solar heating arrangement, although the temperature would vary a lot based on weather. In WA, a large 100W panel gives about .3kWh of energy/day in good conditions. Assuming you have a 12V heater, you can deliver about 10W to the beehive on average, i.e. hardly any heat.

Can this be used just to measure temperature, not control it?

It can control, the temperature Control Range: -50 ~ 110℃.

anyone use this for a dc crock pot?

I used mine to temperature control a food dehydrator and another one to control a dc water heater. The relays on the units handle 10 amps so if you intend to go more than 8 anps, i would drive another relay to supply the power. Both of these work great. I did have a problem with the temo probe of one of my units that controlled the water heater. Instead i mounted another sensor between the insulation abd the metal of the water heater. In this way the sensor does not make contact with hot water. It was written in the description that the sensor is water proof. Maybe not in hot water ? Basically one could concievably temp controll of almost anything. To answer your question, i think it will work just fine....
